Add the coconut milk, maple syrup, and 1 teaspoon of honey and bring to a boil.
Add another tablespoon of coconut milk and continue to boil.
Reduce the heat and simmer for 10 minutes.
Remove from the heat.
Whisk in the remaining 1 teaspoon honey.
Add a splash of water and stir to combine.
Add vanilla extract and stir until combined.
Add more honey if needed.
